This is among my family’s favorite Portuguese recipes. They ask for it all the time. The dish revolves around pork, but also combines the strength of the garlic balanced well by the lemon garnish.

Makes 8 Servings

Cooking + Prep Time: 3 hours & 10 minutes including hours marinating time

Ingredients:

2 julienned garlic cloves, large

2 lbs. of pork tenderloin, sliced in 1” medallions

2 fresh lemons

1 cup of wine, white

1 tbsp. of black peppercorns, whole

2 tbsp. of oil, olive

1 & 1/2 tsp. of salt, coarse
